From time to time, I make a themed lunch for my daycare hooligans. It’s usually for a holiday like Valentine’s Day or Halloween, but at least once every winter, I make a snow-themed lunch for the kids using my favourite french toast recipe and winter-shaped cookie cutters.
I always choose a truly wintery day to make this lunch. It’s perfect for an actual snow day when school has been cancelled due to a snow storm. It’s also great for those days when the snow is coming down in big, fluffy flakes, and we’ve spent the morning building snowmen and snow forts in the yard.
Milk to egg ratio important for the best french toast
My french toast recipe is unbeatable. The ratio of eggs to milk is key to making the best french toast. That ratio is:
1/4 cup of milk for every egg you use.
A pinch of sugar is a must for crispy french toast.
If you love your french toast on the crispy side, add a pinch of white sugar to the egg and milk mixture. The sugar will caramelize in the pan as you’re frying the french toast, resulting in a perfectly crispy coating on your french toast.
Stale bread works best!
For the best french toast, use stale bread or let your bread sit out on the counter for a few minutes to dry out a bit before dunking in the egg and milk mixture. Fresh, fluffy bread tends to absorb the mixture to quickly and can lead to soggy french toast.
Instructions:
- Allow your bread to sit on the counter and dry out a little while you prep things and set your table for lunch.
- Whisk together an egg, a 1/4 cup of milk and a pinch of sugar. Depending on the number of kids you’re feeding, you may need to double those measurements. I used 2 eggs and 1/2 cup milk to feed my little gang.
- Place bread slices on a cutting board and use cookie cutters to cut shapes.
- Melt a generous dollop of butter into a pan over med heat.
- Dip bread shapes in milk and egg mixture and place in pan.
- Cook slowly (5 mins for first side) until golden brown.
- Lower heat, flip french toast shapes and cook other side until golden brown.
- Transfer to plates and dust with icing (confectioner’s) sugar.
When you follow my recipe and cooking instructions, your french toast will be golden-brown and crispy every time.
